Tempeh, Lettuce, Tomato, Avocado Sandwich (TLTA)

Tempeh Bacon Ingredients

  • 1/2 package of tempeh, sliced into thin long pieces

  • 1 tablespoon water

  • 2 tablespoons low-sodium tamari

  • 1 tablespoon maple syrup

  • 1/2 teaspoon liquid smoke

  • 1/2 teaspoon garlic powder

  • fresh black pepper to taste

Sandwich Ingredients

  • 4 slices of bread

  • 8 strips tempeh bacon

  • 4 slices of tomato

  • 2 romaine lettuce leaves, rinsed and dried

  • avocado, sliced

  • vegan mayo or condiment of choice

Directions

Bring a small pot of water to a boil. Add the sliced tempeh, reduce to a simmer and cook for 20 minutes. This removes the bitterness and plumps up the tempeh for better flavor absorption.

Mix tamari, maple syrup, liquid smoke, garlic powder and pepper in a small bowl and set aside, Lightly fry both sides the tempeh in a little bit of olive oil or omit or use vegetable broth if whole food plant-based. Add a tablespoon of water and the tamari mixture to the pan. Simmer over medium heat, flipping to ensure coated on both sides. Cook till desired crispiness.

To assemble sandwiches: Slather one slice of bread with vegan mayo or condiment of choice. Layer on the tempeh bacon, lettuce, tomato, and avocado slices and top with additional slice of bread.

Optional: You can toast sandwich on a lightly greased hot skillet until the bread is golden.
