Chickpea Salad
Ingredients
2 (15-ounce) cans chickpeas, rinsed and drained
6 tablespoons tahini
2 teaspoons Dijon mustard
2 tablespoons maple syrup
1/4 cup diced red onion
1/4 cup diced celery
1/4 cup diced pickle
3 tablespoons grated carrot
2 teaspoons capers, drained and loosely chopped
1 tablespoon roasted unsalted sunflower seeds
hot sauce, optional to taste
salt and pepper, to taste
Directions
Place the chickpeas in a mixing bowl and mash with a potato masher or fork; leave only a few beans whole.
Add tahini, mustard, maple syrup, red onion, celery, pickle, grated carrot, capers, sunflower seeds, hot sauce, salt and pepper to taste. Mix well.
Serve on whole grain bread, in a wrap or a bed of lettuce.
