Peanut Butter Overnight Oats

Ingredients

  • 1/2 cup unsweetened plain almond milk (or dairy-free milk of choice)

  • 3/4 tablespoon chia seeds

  • 2 tablespoons natural peanut butter or almond butter

  • 1 tablespoon maple syrup

  • 1/2 cup gluten-free rolled oats

Directions

In small jar or bowl mix together milk, chia seeds, peanut butter, and sweetener. The peanut butter doesn't need to be completely mixed in. Add oats and stir a few more times. Press down with a spoon to ensure all oats are immersed in the milk.

Cover with a lid and put in the refrigerator overnight (or for at least 6 hours) to set/soak.

Optional: Top with granola, fresh fruit and or flaxseed meal.

Overnight oats will keep in the refrigerator for 2-3 days.
