Beet Sliders

Ingredients

  • 2 cups cooked brown rice

  • 2 cups sunflower seeds

  • 2 cups shredded beets

  • 1 cup sweet onion, diced

  • 1 clove garlic

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons low sodium tamari

  • 1 tablespoon Italian seasoning

  • 1/4 cup nutritional yeast

  • 1-1/2 teaspoons salt

  • 1 tablespoon agave

  • 1/2 teaspoon black pepper

Directions

Preheat oven to 400 degrees. Line a baking sheet with parchment paper and brush with olive oil. In a food processor, combine all ingredients and process until a paste forms. Form into 1/4 cup patties. Place on parchment sheet. Bake for 20 minutes. Flip and bake an additional 10 minutes.

Serve on vegan and/or gluten free slider buns with your favorite accoutrements ie. lettuce, tomato, caramelized onions, ketchup, mustard or your favorite aioli.
